We are in the final stretch of summer, back to school season is just around the corner and fall is quickly approaching so I want to make the most out of the last days of the warm weather and the carefree attitude. The best way to do so? With a huge glass of this delicious Tropical Ice Cream Float.

For me the secret to making this so delicious is using coconut water + soda instead of soda alone. Most floats only call for soda and while they are good they aren't that thirst quenchers, but when you add the coconut water not only you are adding an extra layer of flavor, but you are also making it incredibly refreshing. I also like to add chunks of pineapple to the float and bring it all together with a couple of scoops of coconut ice cream and pineapple soda and finally, I garnish it with some lemon slices because honestly, garnished drinks taste better.
Tropical Ice Cream Float
Ingredients
- 1 cup pineapple, cut into chunks
- ½ cup coconut water
- 1 tbsp simple syrup
- 2 cups pineapple soda
- 4 scoops coconut ice cream
- 2 limes, sliced
Directions
- Add pineapple chunks and scoops of ice cream into tall glasses. Set aside.
- Lightly mix the coconut water, simple, and soda until blended.
- Pour it slowly into the glasses and try to keep bubbling to a minimum.
- Garnish with lime slices and pineapple chunks.
- Serve and enjoy. Put a cool party straw in it.
