Fall is here, and that means pumpkin season! Pumpkin is one of those flavors that just screams comfort food to me. It brings back childhood memories of eating warm pumpkin cookies fresh out of the oven, and these Pumpkin White Chocolate Macadamia Nut Cookies are my recreation of that memory.
This pumpkin puree cookie recipe marries pumpkin with my favorite nut, the Macadamia Nut. Then we add in a little pumpkin spice, cinnamon, and white chocolate. Heck, if one were to make the batter and roll it in cinnamon sugar, you would get a pretty good pumpkin snickerdoodle. We hope that you love this Pumpkin White Chocolate Macadamia Nut Cookies recipe. Pumpkin White Chocolate Macadamia Nut Cookies
Ingredients
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup sugar
- 1/2 cup butter, room temperature
- 1 egg, room temperature
- 1/3 cup pumpkin purée
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 cup white chocolate chips
- 1/2 cup macadamia nuts
Directions
- Preheat your oven to 350 degrees.
- Begin by mixing flour, baking powder, baking soda, salt, pumpkin pie spice and cinnamon in a medium bowl and then set aside.
- Cream together the softened butter and sugar until you get a whipped, airy consistency.
- Add in the egg, vanilla, and pumpkin purée. Mix well.
- Slowly add flour mixture and stir until it is all mixed together.
- Now mix in your white chocolate chips and macadamia nuts.
- Using a cookie scoop or a regular spoon if you don't have a scoop, make one inch balls and place on a cookie sheet about 1 inch apart.
- Bake for around 15-17 minutes, or until golden brown. Remember, baking time varies between ovens.
- Allow to cool, and enjoy!
