Mongolian Beef and Broccoli Recipe

We are back with another fun recipe that includes a few of our favorite flavors, Mongolian beef and broccoli, and rice. The rice is a must. Rice is super easy to make in the instant pot, so having it ready to go is pretty simple. If you don't know how to make rice in the instant pot, here is a quick 2 minute primer in video form; we will wait for you.

Asian inspired meals are always a request in our house, and the kids had been hounding us for a stir fry night. We gave in, and we went with a Mongolian Beef inspired saute with broccoli for nutrients. It was really good; all three of the kids asked for seconds, and that is a rare occurrence. Mongolian Beef and Broccoli Recipe

Ingredients:

  • 1 thinly sliced steak
  • 3/4 cup water
  • 3 tablespoons hoisin sauce
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon freshly-ground black pepper
  • 1 teaspoon toasted sesame seed
  • 1 head broccoli, florets only
  • 1/2 onion, sliced
  • 1 tablespoon peanut oil
  • cooked rice

Directions:

In a medium bowl, mix together the water, hoisin, soy, cornstarch, vinegar, sesame oil, garlic, ginger, pepper, and sesame seeds.

Add the steak to the sauce mix and allow it to rest for 15 minutes.

Heat the peanut oil in a large saute pan or wok over a medium high heat.  Remove the beef from the sauce and saute.

While the steak cooks, place the broccoli and onion in a microwave safe bowl. Cover with plastic wrap and microwave for 2-3 minutes.

Add the microwaved vegetables and the left over sauce to the saute pan.  Cook for 2-4 minutes, or until the sauce thickens.

Place the rice on a plate, and top with the Mongolian Beef and Broccoli.
