We recently had a get-together to cook out for some friends and family. The menu was none other than beef and anyone who knows my husband knows that is pretty much what he serves whenever he cooks. The guy loves beef so a Mediterranean Grilled Beef Recipe was right up his alley. In true Jason style…let's just say that my husband has never met a recipe that he followed exactly. He looks at recipes as vague guidelines, and he always asks “How can I grill this”? So I found this recipe on the beef website for Mediterranean Braised Beef. He thought that the flavors would be perfect and since the recipe wasn't quite right for grilling out, he made a few changes. So with that, we present our Mediterranean Beef Recipes.

Directions

  1. In a medium saute pan, heat the olive oil over a low flame. Add the onion, shallot, and dates to the pan. Cook until the onion becomes soft and translucent. Remove the pan from the flame and add the balsamic vinegar and 1/4 cup of water. Set aside and cool.
  2. Pierce the skirt steak with a fork multiple times. Season with salt and pepper, rub it in, and then bathe the meat in the balsamic and date mixture. Allow the meat to marinate for 3-4 hours.
  3. Prepare your grill; you want nice hot coals.
  4. Remove the skirt steak from the marinade and lightly dust it with flour. Grill the steak to your preferred temperature. I find that around 4 minutes per side is perfect (mid-rare).
  5. Carve steak and serve. One important note here though. Skirt steak, just like flank steak, has a grain. Always, I mean, cut across the grain. If you cut with the grain you end up with chewy steak, but when you cut across? That steak will melt in your mouth.

  • Smoky: Use smoked paprika or a sprinkle of liquid smoke for a deeper, complex flavor.
  • Herbs: Experiment with different herbs like oregano, thyme, or basil for a unique twist.
