Mango BBQ Pork Ribs Recipe

Mango BBQ Pork Ribs Recipe

- Chop the mango, cilantro, garlic, onion, and carrot in a food processor until fine. You don't want to puree things, but you want a small chop. Sauté with the olive oil until the mixture becomes soft and the onions translucent. Now add the hoisin, brown sugar, oj, and 2 cups of water. Simmer for 5 minutes, and then add the bbq sauce. Simmer everything for 15 minutes, then turn off the heat.
- Preheat your oven to 350. Rub the ribs with the sweet and smoky rub, and then brush with bbq sauce. Place the ribs in a large pan with rack. Add 1 cup of bbq and 1 cup of water to the bottom of the pan, then cover and tent the ribs with aluminum foil. Bake everything for 1 1/4 hours.
- While the ribs are baking prepare the grill. You want 250 degrees with plenty of wood chip for smoke. We used apple and cherry wood. Once the ribs are done cooking in the oven, baste with the bbq sauce and transfer to the grill using a rib roasting rack. Cook/smoke for 1 ½ hours, basting every 15 minutes.
- Eat and enjoy.
