Instant Pot Chicken Thighs Honey Garlic
Ingredients
- 5 pieces of natural chicken breasts, medium in size
- 2 small onions or about 1 cup, finely chopped
- 2 tablespoons natural honey
- 1 tablespoon dried or a few sprigs of fresh thyme, this is our favorite herb, so we use both
- about 15 ounces of quality bone broth or chicken stock
- a few smashed cloves of garlic
- salt to taste
- pepper to taste
- a few tablespoons of avocado oil or extra virgin olive oil for sautéing the onions
- about 4 carrots, peeled and cut into slightly larger pieces
Directions
- My favorite way to start pretty much every recipe in our Instant Pot is to fully sauté and brown finely chopped onions. They add an incredible full bodied and rich flavor to all dishes. Do this with the oil, onions, smashed garlic, thyme salt and pepper. Once cooked through and golden brown, add the broth or stock and honey. Stir everything to make sure it is properly combined and then lay the chicken in the liquid and place the carrots around the chicken.
- Use the Instant Pot’s Poultry setting and adjust time to 7 minutes (the actual cook time required does depend on the size and total weight of the chicken so adjust up or down by 1 minute if you have larger chicken pieces or adjust down if needed for smaller pieces). Lock the lid and prepare your sides, we served this with the carrots and rice.
- When the timer has gone off you will still need and want to wait for the pot to natural pressure release (NPR). This could take about 15 minutes or so, but worth the wait. NPR will help hold all of the moisture in the meat and give you a really nice finished piece of chicken.
- Once the Instant Pot pressure is released and the lid unlocks, you can enjoy the meal as is or remove the chicken and switch the setting over the sauté mode and reduce the remaining liquid and to a thicker and really rich sauce.

This looks good and I bet tastes even better. Oddly enough, thyme is a spice I dont use much, I have no clue why. I like the taste of it, and really should experiment more. This might be a recipe I will have to dig out the thyme and give this one a try!

Is there a way to cook the Rice and carrots at the same time as the chicken in the instant pot?

I really want to try this, however, I don’t like Thyme in anything and it seems many Instant Pot recipes contain this spice. What would be an alternative? Otherwise, I just eliminate it with no replacement other than extra garlic & onion.
Terri I would try any herb that you do like! Rosemary and oregano would work. Basil would be good too, but I would add it at the end as it doesn’t hold up as well flavor-wise to cooking.
