Ricotta Gnudi Pasta Recipe with Creamy Sausage Pesto

Ingredients for the Gnudi Pasta

  • 15 oz whole milk ricotta cheese
  • 3 egg yolks
  • 1 cup flour
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • EVOO

  • 12 oz ground sausage with sage, cooked and drained
  • 3 tablespoons butter
  • 1/4 cup shredded Parmesan cheese
  • 1 cup cream
  • 1/4 cup pesto
  • Salt & pepper to taste

Directions for the Gnudi Pasta

  1. Lay out a couple of pieces of cheesecloth (or you can use a paper towel) on a plate.
  2. Scoop the ricotta cheese onto the paper towel, lay another piece on top, and press gently to get rid of the excess water.
  3. Scoop the ricotta into a large mixing bowl, add 3 eggs, and gently mix.
  4. Mix in the grated Parmesan cheese, flour, and salt and pepper.
  5. Set the dough onto a floured surface and knead it into a ball.
  6. Use a pizza cutter to cut the dough like a pizza, into 8 even slices.
  7. Roll out each slice into a log, about 1/2”-3/4” wide, and cut into 3/4” pieces.
  8. Bring a pot of water to a boil and add your ricotta gnocchi pieces.
  9. Use a slotted spoon to remove the gnocchi once they rise to the top and float.
  10. Add to a frying pan with 1 tablespoon of EVOO and cook for about 3-4 minutes to if you like them a touch crispy.

Directions for Creamy Sausage Pesto

  1. In a frying pan, cook your ground sausage until browned and crumbly. Usually takes around 10-15 minutes. Drain and set the sausage aside.
  2. In a clean pan, add butter, cream, pesto, salt, and pepper and bring to a boil over medium heat.
  3. Mix in Parmesan cheese until melted.
  4. Mix in the cooked sausage and toss with gnocchi.
