We love scampi. Even my kids love it but it’s a pain to cook. I hate flipping one by one, and then if you cook it just a little too long it’s rubbery. I have come up with a much simpler way to cook it, and being on a stick makes it a super fun and family-friendly dish. This recipe is delicious, incredibly filling, and can easily be made even lighter by decreasing the butter and increasing the lemon. Serve over rice, a hearty serving of fettuccine or linguine like we did or completely scrap the starch and serve with garlic bread as an appetizer.
