Nothing says summer like a cold, refreshing salad. Now I usually go for savory salad recipes, but every once in a while I want something a little different and fun. Well, this cold salad recipe is in no way savory and has Mandarin oranges in it, which are one of my faves. This salad is also a bit of a throwback in time; have you ever had jello ambrosia salad? How about a Jello fruit salad with marshmallows or fruit fluff; maybe even an orange creamsicle salad? This stuff was all the rage once, and it tastes better than you might think. There is a reason this stuff was popular…it does taste great. This particular jello fluff recipe is orange-based, and it gets its fluff from Cool Whip and vanilla pudding. I know…it sounds weird. - In a small saucepan, bring the 1 cup of water to a boil. Transfer the water to a large mixing bowl and add the jello mix, stirring constantly. Continue to stir until all of the Jello powder is dissolved.
- Add in ½ a cup of ice and stir until the ice is fully melted.
- Transfer the bowl the the refrigerator and allow it to rest for about 20 minutes.
- Remove the Jello from the fridge and whisk in the vanilla pudding mix. Place back into fridge for 20 minutes, or until the mixture thickens.
- Remove the bowl from the fridge and fold in the cool whip, oranges, and marshmallows. Do not overmix.
- Place back into the fridge to chill for at least 2 hours before serving.
