Dinner time is almost always one of the busiest time of the day around here. So while sometimes I love to spend time cooking something indulgent and elaborated, other times I just want to cook something easy and quick that gets food on the table fast, but I also want it to be truly delicious. My go to? This Rainbow Chicken Fried Rice Recipe.
First, this is way better than takeout. To be completely honest with you, after you make this at home, you'll never want to ask for takeout again, that's how good it is.
Another great thing that I love about this recipe is that's packed with veggies, so it's fairly healthy. It has cabbage, bell peppers, cucumbers and broccoli and while those are my favorite ones you can pretty much add any other veggie that you have on hand or that's sitting sadly at the back of your fridge (you know which veggies I'm talking about).
I also add chicken to give it some protein, but you can use shrimps or beef too. I'm telling you this is one of those recipes that you can pretty much make again and again and tweak something every time to fit your taste and the things you have on hand. Rainbow Fried Rice is also a great recipe to make if you have a bunch of leftovers in your fridge.
The secret to blending all the flavors together and make this taste like the real fried rice you can find at restaurants is in using the seasonings: soy sauce, rice vinegar, and sesame oil. Those three things plus a generous sprinkle of sesame seeds are what make this recipe shine. If you like to spice things up, you can also add a kick of Sriracha sauce to the mix.
